    Chocolate Bourbon Pie

    Recipe Introduction


    This pie is one of the first pies I ever made for company. The consistency is more like a mousse. And it's very, very rich!


    List of Ingredients


    • 1 graham cracker crust
    • 6 oz. chocolate chips
    • 1 egg, whole
    • 2 egg yolks
    • 2 egg whites
    • 2 tsp. bourbon
    • 1 cup whipped cream
    • 1/2 sq. baking chocolate


    Instructions


    1. Melt chocolate chips and baking chocolate in double boiler. Remove from heat.
    2. Beat in egg yolks one at a time and then the whole egg.
    3. Add bourbon.
    4. Beat egg whites until stiff and fold into chocolate mixture.
    5. Beat cream until whipped and fold into chocolate mixture.
    6. Pour into pie shell and chill for at least 3 hours.
    7. When ready to serve, decorate with more whipped cream and chocolate curls, if desired.


    Final Comments


    This one is quick, easy, and really, really good.
