Chocolate Bourbon Pie

Recipe Introduction
This pie is one of the first pies I ever made for company. The consistency is more like a mousse. And it's very, very rich!
List of Ingredients
- 1 graham cracker crust
- 6 oz. chocolate chips
- 1 egg, whole
- 2 egg yolks
- 2 egg whites
- 2 tsp. bourbon
- 1 cup whipped cream
- 1/2 sq. baking chocolate
Instructions
- Melt chocolate chips and baking chocolate in double boiler. Remove from heat.
- Beat in egg yolks one at a time and then the whole egg.
- Add bourbon.
- Beat egg whites until stiff and fold into chocolate mixture.
- Beat cream until whipped and fold into chocolate mixture.
- Pour into pie shell and chill for at least 3 hours.
- When ready to serve, decorate with more whipped cream and chocolate curls, if desired.
Final Comments
This one is quick, easy, and really, really good.
