    Cookie Jar Favorites cookbook

    One of the teachers brought in this cookbook and I copied many recipes. Made this for the first time this Christmas and thought they were pretty tasty.

    List of Ingredients




    1 package duncan hines moist deluxe lemon supreme cake mix
    2 eggs
    1/3 cup vegetable oil
    1 tbsp. lemon juice
    3/4 cup chopped nuts or flaked coconut
    powdered sugar

    Recipe



    Preheat oven to 375. Grease baking sheets.

    Combine cake mix, eggs, oil and lemon juice in large bowl. Beat at low speed with electric mixer until well blended. Add nuts (if desired). Shape dough into 1 inch balls. Place 1 inch apart on prepared baking sheet.

    Bake at 375 for 6 to 7 minutes or until lightly browned. Cool 1 minute on baking sheets. Remove to cooling racks.

    Sprinkle with powdered sugar.

    You can also frost the cookies with 1 cup powdered sugar mixed with 1 tbsp. lemon juice instad of sprinkling with powdered sugar.
