    While waiting at the hairdresser's, I found this recipe and thought it sounded interesting. So I copied it down and made it the very next day.


    List of Ingredients


    • 1 lb. asparagus, cut in 2" pieces
    • 2 tsp. butter
    • 2 shallots, minced
    • 1 clove garlic, minced
    • 8 oz. mushrooms (any kind) sliced
    • 1 1/2 tsp. salt
    • 3/4 tsp. ground pepper
    • 1/2 cup red wine (dry)
    • 2 Tbsp. flat leaf parsley
    • 1 1/2 lb. London Broil


    Instructions


    1. Cook asparagus until crisp. Drain and put aside.
    2. In skillet add butter and melt, then add shallots and garlic. Cook for approximate 1 minute. Add the mushrooms and 1/2 tsp. salt. Cook approximately 5 minutes.
    3. Stir in red wine and cook until the liquid is almost evaporated (about 3 minutes).
    4. Add the asparagus, 1/4 tsp. pepper and parsley. Put aside.
    5. Sprinkle steak with remaining salt and pepper (to taste).
    6. Cook in skillet 3 minutes on each side for medium rare and then let stand for 5 minutes more.
    7. Reheat vegetable mixture.
    8. Slice steak and serve with vegetables either as a sauce or next to it as a side dish.


    Final Comments


    Since everyone in my house likes their steak a little more medium, I cooked it on each side for about 5-7 minutes. This could also be grilled very easily.
