    List of Ingredients




    2 tbsp olive oil
    1 pork tenderloin (1 1/2 lb)
    2 Tbsp pumpkin pie spice
    2 gala apples cored and quartered
    1 large sweet potato, scrubbed cut into 1 inch thick wedges (I used two)
    Kosher salt and ground black pepper
    5 oz. baby arugula
    lemon wedges for serving

    Recipe



    Heat oven to 400 degrees. Rub 1 Tbsp olive oil all over pork and place on a rimmed baking sheet.
    Rub port all over with pumpkin pie spice.
    Arrange apples and sweet potatoes around pork drizzle them with rest of olive oil and toss to coat.
    Season everything with salt and pepper.

    Roast 10 minutes then reduce oven temp to 350.
    Continue roasting until pork registers 145 on a meat thermometer and apples and sweet potatoes are tender (about 30 minutes).

    Transfer pork to cutting board and rest 10 minutes. Thinly slice into medallions and serve with apples and sweet potatoes and arugula.

    Serve with lemon wedges.
