    Pasta with Spinach & Ricotta

    While flipping channels one Sunday, I watched a show that showed how to make five different things...this is so simple, I didn't even have to write the ingredients down

    List of Ingredients




    1 pound pasta (your choice)
    1 bag spinach leaves
    1/4 cup pine nuts (toasted in a 350 degree oven for about 10 minutes, check after 5 minutes)
    ricotta cheese (small container)
    parmesan cheese
    salt and pepper to taste

    Recipe



    Boil water. Add salt. Add pasta. Cook to your preference.
    Add the spinach to cook briefly.
    Drain.
    Serve pasta and spinach in bowls. Add 1 tablespoon ricotta to the center of the pasta.
    Sprinkle pine nuts.

    Serve with parmesan cheese.

    Looks great and tastes even better!!!
