    Rosemary and I met at a Gymboree class when Katie and her daughter, Christie, were just 3 years old. The girls remained friends until about 3rd grade, although Ro and I tried to stay in touch for longer.

    List of Ingredients




    6 links sweet Italian sausage
    1/2 lb. pasta (your choice)
    2 green peppers, cut in strips
    1 red onion, sliced thin
    2 cups red kidney beans, drained
    3 hard boiled eggs (quartered)
    3 tbsp. fresh chopped parsley

    Dressing
    2/3 cup oil
    3 tbsp. wine vinegar
    1 clove chopped garlic
    1/2 tsp. salt
    black pepper
    pinch oregano

    Recipe



    Prick sausage and boil for 1 minute. Slice and fry until cooked.

    Cook and drain pasta.

    Combine everything except ingredients for dressing.

    Combine dressing ingredients and mix well.

    Refrigerate several hours or overnight.

    Can also be served warm.
