    Otteman Family Reunion

    Another family favorite from the 1996 reunion.

    List of Ingredients




    1 cup butter
    2 cups sugar
    1/4 cup cocoa
    4 eggs
    1 teaspoon vanilla
    1 1/2 cups sifted flour
    3 1/2 ounces coconut
    1 1/2 cups chopped pecans
    7 1/2 ounces marshmallow cream

    1/2 cup butter
    1/2 cup cocoa
    4 cups sifted powdered sugar
    1/2 cup evaporated milk
    1 teaspoon vanilla

    Recipe



    Cream together butter, sugar and cocoa until light and fluffy, using the electric mixer at medium speed. Add eggs and vanilla and beat 2 more minutes. Blend in flour. Stir in coconut and pecans. Spreak mixture in greased 15-1/2 x 10-1/2 x 1 inch jelly roll pan.

    Bake at 350 for 30 minutes or until done. Remove from oven, spread marshmallow cream over all. Let stand 5 minutes. Spread carefully with metal spatula. Prepare cocoa frosting and frost while still warm.

    For frosting. Combine butter and cocoa in saucepan; place over low heat until butter melts. Cool slightly. Combine powdered sugar, evaporated milk and vanilla in bowl of electric mixture. Add cooled cocoa mixture. Beat until smooth. Spread carefully over marshmallow cream on cake.
