    One of my favorite restaurants is the Buckhead Diner in Atlanta, and this is a dish they have offered since the day they opened their doors sometime in the mid-'80s. Their version involves Maytag blue cheese sprinkled over fresh homemade potato chips still hot from the fryer,
    but my version is infinitely easier and almost as good. You can make these in one big batch and serve them to a crowd, or you can make smaller individual portions for an unusual - and delicious - appetizer or first course.

    List of Ingredients




    Potato chips
    Crumbled blue cheese

    Recipe



    Arrange the potato chips on a heatproof platter or individual serving plates and sprinkle with blue cheese. Heat in a preheated 350F (180C)oven until the cheese melts, 5 to 8 minutes, or cook in a microwave oven for about 30 seconds. Serve immediately.
