    ½ cup barley
    1 ¾ cups (one 14 ½ oz. can) beef broth
    4 cups water
    2 full cups (12 oz.) diced lean cooked roast beef
    1 ½ cups diced carrots
    1 cup diced celery
    ½ cup chopped onion
    1 tsp dried parsley flakes
    1/8 tsp black pepper

    Recipe



    In large saucepan, combine barley, broth, and ¼ cup water. Cook for 5 minutes or until barley is tender, stirring occasionally. Add remaining water, roast beef, carrots, celery, and onion. Mix well. Stir in parsley abd pepper. Bring to boil. Lower heat, cover, and simmer for 15 minutes or until vegetable are tender.

    Serves 6 (1 1/3 cups)
    180 calories, 4 gm fat, 19 gr protein, 17 gm carbs, 319 mg sodium, 30 mg calcium, 4 gm fiber
