    List of Ingredients


    • 4 oz diced, sausage or ham, bacon is also excellant
    • 1 cup diced onion
    • 1/2 cup diced celery
    • 2 garlic cloves, minced
    • 2 cups chicken broth
    • 4 oz black eyed peas, picked over and rinsed
    • 1 bay leaf
    • 4 oz long grain white rice
    • 1/2 tsp dried thyme
    • 1/2 tsp pepper
    • 1/4 cup chopped scallions
    • 2 Tblsp minced parsley


    Instructions


    1. Spray meduim saucepan with nonstick cooking spray.

    2. Add sausage, if using: cook over meduim heat, stirring occasionally, 3 minutes until lightly browned

    3. Add onion and celery; cook, stirring until onion is golden

    4. Add garlic; cook, stirring, 1 minute more

    5. Add broth, black eyed peas, bay leaf and 2 cups water, bring to a boil

    6. Reduce heat, cover and simmer 1 hour, until peas are soft but not mushy.

    7. Add rice, thyme and pepper; cover and simmer 15 to 20 minutes until rice is just tender

    8. Remove from heat; let stand 10 minuted, covered.

    9. SPrinkle with scallions and parsely and serve



    Final Comments


    I personally like to use bacon I don't drain the grease it gives it an added flavor. I also use brown rice.
