Stuffed Chicken Breasts

4 chicken breasts, butterflied
2 whole red peppers, cut into thirds
1 16oz ball of low moisture mozzarella cheese (slice into 1/4 inch x 4
2 cloves chopped garlic
1 Tblsp salt and pepper
olive oil
basil to garnish
wood cooking skewers
Recipe
Bake time 40 minutes
serves: 4
Butterfly each chicken breast and rub inside and out with olive oil.
Place one 1/4 inch slice of mozzarella and one piece of pepper inside each chicken breast.
Fold top of chicken breast over and pull tightly before securing with wooden skewer.
Add salt and pepper, chopped garlic, basil and drizzle closed breasts with olive oil
Chop remaining red peppers and place in pan surrounding chicken breasts.
Cover pan with foil and cook at 375 degrees for 30 minutes, remove foil and continue baking another 10 minutes
Remove skewers and serve.
