    Artichoke Hearts Dip

    List of Ingredients

    2 - 14 oz. cans artichoke hearts, drained
    ¾ cup mayonnaise
    ½ cup Parmesan cheese
    dash of tarragon vinegar
    salt and pepper


    Recipe

    1. Place artichokes between paper towels and squeeze to remove excess moisture.
    2. Cut into quarters.
    3. Combine mayonnaise, cheese and vinegar in a mixing bowl.
    4. Add artichokes and stir gently to coat.
    5. Turn into a shallow baking dish or pie plate.
    6. Bake at 350ºF for ½ hour OR turn into a glass or microwave-safe dish and microwave on high for 2 minutes, turning the dish if necessary to cook evenly.
    7. Serve hot with toothpicks, melba toast, crackers, or scoop-worthy tortilla or corn chips.
