    BLUEBERRY COCONUT MUFFINS

    3/4 c. oil
    3/4 c. honey
    3 eggs
    1 1/2 tsp. lemon rind
    3 tsp. vanilla
    4 c. whole wheat pastry flour
    1 1/8 c. shredded unsweetened coconut
    1 1/2 tsp. baking powder
    1 1/2 c. blueberries (fresh or frozen)

    Preheat oven to 350 degrees. Blend wet ingredients well. Mix together
    the flour, coconut and baking powder. Blend into wet ingredients.
    Lightly stir in the blueberries. The batter will be thick. This makes a
    delicious muffin. You can add milk, however, if you desire a runnier
    batter. Spoon into greased muffin pans and bake for about 30 minutes or
    until a knife comes out clean. Makes 18 muffins.
