    Strawberry Muffins

    2 cups flour
    2 tablespoons baking powder
    1/2 teaspoon salt
    1 cup sugar
    6 teaspoons sugar
    1 1/2 cups chopped strawberry
    2 eggs
    1/2-1 cup unsalted butter, melted
    1/2 cup milk
    1 teaspoon vanilla extract


    1. Heat oven to 375 degrees.
    2. Combine four, baking powder, salt and 1 cup of the sugar in medium bowl.
    3. Toss in strawberries, set aside.
    4. Beat together eggs, butter, milk and vanilla in small bowl.
    5. Add wet ingredients to the dry ingredients; stir until just combined.
    6. Spoon batter into muffin tins lined with paper.
    7. Sprinkle 1/2 tsp of sugar on top of each muffin.
    8. Bake 25 minutes or until a toothpick inserted in middle of muffin comes out clean.
