    This recipe was in the Houston Chronicle food section today. It sounds really good Kenna Lou

    Chronicle kitchen-tested recipe.

    BANANA BREAD MADAME HELENE

    Ingredients:
    2 1/4 cups sugar
    12 tablespoons butter
    3 eggs
    1 1/2 teaspoons vanilla extract
    Zest of 1 lemon, grated
    4 bananas, mashed (about 1 1/2 cups)
    3 cups flour
    1 teaspoon baking soda
    1 teaspoon baking powder
    3/4 teaspoon salt
    1/3 cup sour cream
    1 cup chopped nuts (optional)

    The Process:
    Preheat oven to 350 degrees.

    In a medium bowl, cream sugar and butter until light and fluffy. Add eggs, one at a time. Beat well. Add vanilla extract, lemon zest and bananas; mix well.

    In a separate bowl, sift together flour, baking soda, baking powder and salt. Add sifted ingredients alternately with sour cream to the sugar mixture, mixing well after each addition. Blend in chopped nuts.

    Butter and sugar two loaf pans. Divide batter between them. Bake in oven 30 to 40 minutes or until tester inserted in center comes out clean. Cool slightly in pans; turn out on racks to cool.

    Makes 2 loaves.
