    Cinnamon Orange French Toast

    French toast is low-fat and
    cholesterol-free when you make
    it without eggs. Vary the bread
    you use for different flavors &
    textures (cinnamon raisin is good)

    1 cup soymilk or rice milk
    3 T. cornstarch
    1 T. orange juice concentrate
    1 T. maple syrup
    1 tsp. vanilla
    1/2 tsp. cinnamon
    1/8 tsp. salt
    4-6 slices whole grain bread
    ------------------------------
    Mix all but bread together and
    pour the mixture into a broad,
    flat dish. Coat each slice of
    bread on both sides with the
    mixture. Preheat a nonstick
    skillet or griddle and mist it
    with a vegetable spray. Add the
    slices of coated bread to skillet
    and cook until the first side is
    golden brown, about 3 minutes. Turn
    carefully with a spatula and cook
    the second side until golden brown,
    about 3 minutes. Serve hot with
    maple syrup or fruit preserves.
