    Corned Beef Hash

    3 cups cooked boiled potatoes, cubed
    2 cups cooked chopped corned beef
    1/2 cup finely chopped onion
    about 1/2 cup milk
    1/2 teaspoon salt
    Dash of pepper
    3 to 4 tablespoons butter or margarine
    Combine potatoes, corned beef and onions; add enough of the milk to moisten and the salt and pepper. Melt butter in a skillet. Spread beef mixture evenly in pan and cook over low heat about 20 minutes or until well browned on bottom. Turn in sections with spatula and brown other side. Or fold over as for omelet, if desired. Makes 4 servings.

    Contributors notes: The milk used in corned beef hash and roast beef hash is what makes the hash get nice and golden and crispy.
