Sweet and Sour Chicken Salad
List of Ingredients
- 2 cups cooked chicken - - diced
- 10 strips of bacon
- 3/4 cup granulated sugar
- 3/4 cup cider vinegar
- 1/4 teaspoon pepper
- 1 teaspoon celery seed
- 1/4 teaspoon dill seed
- 2 tablespoons grated onion
- 1/2 cup diced green pepper
- 1/2 cup diced canned pimiento
- 3 cups cooked fluffy rice
- 3 hard-boiled eggs, shelled and sliced
Instructions
- Fry the bacon until crisp and remove from skillet.
- To the bacon grease that has collected in the skillet, add the sugar, vinegar and pepper. Stir and cook over low heat until all of the sugar is dissolved.
- Add the celery seed, dill seed, onion, green pepper and pimientos.
- Continue to cook over low heat and stir in the chicken.
- When completely heated, spread the hot rice on a deep platter and pour the chicken mixture over it.
- Crumble up the bacon and sprinkle over the top.
- Arrange the egg slices around the edge of the platter.
- Serve at once, piping hot.
