Bacon Cheddar Jalapeno Poppers

12 jalapenos with stems
1 (16 ounce) package Cheddar cheese
12 slices bacon
Preheat the grill. Using a thin knife, cut the top 1/4 (lengthwise) from the jalapenos leaving the stem intact. Use a spoon to gently remove the seeds inside. Cut the cheddar cheese into 12 chunks small enough to fit in the jalapenos. Stuff peppers with cheese and wrap with bacon so the opening in the pepper is completely covered with bacon. Securing bacon with a toothpick. Grill over medium heat, turning once until bacon is crisp, about 5-10 minutes.
Tip: Always wear rubber gloves when handling jalapenos. This recipe can also be made with cream cheese instead of Cheddar.
