Baked Chicken and Rice
1/2 cup plus 1 tablespoon butter or margarine, melted
1/2 cup mushrooms, chopped
1/4 cup celery, chopped
1/2 cup plus 1 tablespoon flour
1 tablespoon salt
1/4 teaspoon pepper
4-1/2 cups milk
1-1/3 cups water
1 cup long-grain rice, uncooked
Dash of garlic salt
6 to 8 seasoned chicken parts
Add mushrooms and celery to melted butter in saucepan and sauté until golden. Stir in flour and seasonings. Gradually add milk and bring to the boiling point, stirring constantly until thickened. Remove from heat.
Blend in water. Add rice and garlic salt, mixing well.
Pour into a large roaster or baking pan. Arrange chicken pieces on top of rice mixture. Cover and bake for 3 hours at 300 degrees.
Makes 6 to 8 servings
