Cajun Chicken Kabobs

Recipe Introduction
Serves 3 to 4.
List of Ingredients
1 pound Chicken breast (boneless, skinless), cut into 3/4 inch cubes
1 Tablespoon Butter, melted
2 teaspoon Cajun seasoning (blackened redfish seasoning)
1 Green bell pepper, cut into 3/4 inch pieces
1 Onion, cut into 3/4 inch pieces
Bamboo skewers
Rice, cooked
Instructions:
Soak the bamboo skewers in water for 30 minutes (to prevent them from burning during cooking).
Toss the chicken with the seasoning and butter. Alternate the chicken, onion, and pepper on the skewers.
Place them on a slow-cooking part (and upper height) of the grill; or bake at 350 degrees for about 20 minutes, turning once.
Turn every few minutes to ensure even grilling on all sides. Serve over cooked rice.
