List of Ingredients
Cheesy Chicken Breasts
4 chicken breasts, skinned boned & split( I use boneless/skinless chicken breasts)
1 C Cracker crumbs(any type of cracker will work, ritz is good)
2 eggs, well beaten
½ C butter plus 2tbs vegetable oil
1 large can mushrooms, stems & pieces(may also use fresh mushrooms sauteed in a garlic butter, yum)
2/3 C water
½ tsp of the following seasonings:
seasoned salt, pepper, onion powder, and salt.
1 C grated Mozzarella Cheese
Directions:
Pound Chicken breasts to flatten.(I only flatten a little, so not too thin) Combine cracker crumbs & seasoning. Coat chicken in cracker mixture, dip in egg and return to cracker mixture. Refrigerate 30mins, allowing cracker and egg mixture to set. Melt butter & oil in large skillet. Brown chicken, Place in baking dish. Add water, cover with foil and bake at 350° for 1 hour.
Sauté mushrooms, add to chicken. Make sure there’s enough liquid so chicken won’t bake dry. Bake 30mins longer; remove from oven and add cheese. When cheese has melted, serve.
