    Chicken Croquettes

    2 cups cooked chicken, ground or chopped fine
    Pinch of celery salt
    1 teaspoon lemon juice
    1/8 teaspoon paprika
    1 tablespoon parsley
    1/4 teaspoon chopped onion
    1 cup White Sauce

    Bread Crumbs
    Beaten eggs

    WHITE SAUCE

    1 tablespoon butter or margarine
    1 tablespoon flour
    1/2 teaspoon salt
    1/8 teaspoon pepper
    1 cup milk

    Mlet butter; then add flour, salt, and pepper and mix well. Gradually add milk, stirring constantly, until thickened.

    Combine chicken, seasonings, and white sauce. Shape into croquettes and roll in bread crumbs. Then roll croquettes in beaten egg and again in bread crumbs.

    Fry in deep fat for 4 minutes or until golden brown.

    Makes 4 servings
