Stuffed Chicken Breasts

List of Ingredients
8 ozs. ground pork
1/2 stick butter
2 tbls. chopped onion
2 tbls. chopped red bell pepper
1/4 tsp. chopped garlic
1 tsp. chopped celery
8 ozs. peeled and deveined shrimp, chopped
4 boneless, skinless chicken breast halves, pounded flat
1/2 cup milk
1 egg
1 cup flour, seasoned with salt and pepper
1. Brown pork in skillet. Drain oil. Melt butter in skillet. Add chop-
ped onion, bell pepper, garlic and celery and sauté for 15 minutes.
Stir in shrimp and cook for 5 minutes longer. Remove from heat and
let cool.
2. Spread mixture on each chicken breast. Then roll each one up and
close with toothpicks.
3. Combine milk and egg to make egg wash. Dip chicken breasts, one at
a time, in egg wash and then roll in flour. Deep-fry in hot oil for
10 minutes. Remove toothpick serving.
Serves 4.
