Country-Style Chopped Sirloin

List of Ingredients
4 Salisbury steaks or chopped beef patties, (6 to 8 ounces each), 1 inch thick
2 tablespoons butter or margarine
2 tablespoons minced green onion
2 tablespoons minced parsley
1 clove garlic, minced or pressed
2 tablespoons dry white wine or vermouth or 2 teaspoons lemon juice plus 4 teaspoons water
1 red pepper, seeded and minced
2 tomatoes, thinly sliced
Recipe
1. Place steaks on rack on broiler pan.
2. Broil, 6 inches from heat, for 6 to 8 minutes on each side for rare or 9 minutes each side for medium-well.
3. While steaks broil, melt butter in heavy skillet. Add green onion, parsley, garlic, white wine and red bell pepper.
4. Heat to boiling. Cook 2 minutes.
5. Place the tomato slices in the skillet with the sauce. Heat in sauce until just warmed through.
6. Remove steaks from broiler when cooked to your liking. Place a warm tomato slice on top of each steak.
7. Spoon sauce over broiled steak and tomato. Serve immediately.
