    Baked Icelandic Cod

    1/2 yellow pepper, thinly sliced
    1/2 medium red onion, thinly sliced
    2 Tablespoon Laurenti extra virgin olive oil
    2 6 oz. Icelandic cod fillets
    2 Roma tomatoes, thinly sliced
    2 Tablespoon Farmers Market fresh dill, chopped
    Kosher salt & freshly ground black pepper
    Zest of 1 lemon
    Parchment paper or aluminum foil

    Recipe Directions:
    Preheat oven to 450 degrees Fahrenheit. Place rack in center of oven.
    In a medium skillet, sauté peppers and onion in olive oil until tender, about 10 minutes.

    Place each fillet on a piece of parchment paper or foil. Season the fillets with salt and pepper; add dill and lemon zest. Top with sliced tomatoes and sautéed
    vegetables.

    Fold parchment or foil over fillet and fold in edges to form a pouch. Place pouches on baking sheet and bake at 450 degrees Fahrenheit for 14-16 minutes.

    Serving Ideas:
    Kosher salt & freshly ground black pepper should be added to this recipe to suit your individual taste.


    Parchment Preparation How To:
    Fold a large sheet of parchment paper in half and cut out an oval shape approximately three inches larger than the fillet.

    Place the fillet near the fold and add seasonings, vegetables and wine. Brush edges of parchment with melted butter.

    Fold paper to enclose fillet, making small folds to seal edges. Be sure each fold overlaps the one before, so there are no gaps.

    Place packets on baking sheet and bake. When done, carefully remove top layer of parchment with a sharp knife, being cautious of steam, and serve hot.
