    Recipe Introduction


    These miniature lemon pies come from the Winston-Salem Community Cookbook, "Heritage of Hospitality". With a dollop of whipped cream, each one is a beauty.

    List of Ingredients




    LEMON TASSIES

    1/2 cup (1 stick) butter, softened (NO substitutes)
    1 (3 oz) pkg cream cheese, softened
    1-1/4 cups all purpose flour
    2/3 cup granulated sugar
    2 large eggs
    3 tblsps fresh lemon juice
    3 tblsps butter, melted
    whipped cream, for garnish

    In large mixing bowl at med speed, beat softened butter & cream cheese utnil light & fluffy. Add flour; beat until crumbly. Lightly knead dough until it holds together; shape into ball.

    Preheat oven to 350ºF. Spray 1-3/4" miniature muffin pan cups with vegetable cooking spray.

    Pinch pastry off, 1 tblsp at a time; press into prepared muffin cups.

    In med bowl, mix sugar, eggs, lemon juice & melted butter. Divide filling evenly among muffin cups.

    Bake 40-45 mins. Remove cookies from pans while slightly warm; transfer to wire racks to cool completely. Top each tassie with a dollop of whipped cream.
