Recipe Introduction
This is a favorite German recipe. It was made by my mother, Eva, and her mother, Elizabeth. This recipe is an annual family reunion favorite! It is perfect for picnics because you don’t have to worry about it sitting out and spoiling.

Hot German Potato Salad
(Kartoffel Salat)
2 lb. Potatoes (or enough for the amount of people you plan to feed)
5 sweet onions, sliced
1 lb. Bacon, chopped, fried and drained
1 c. vinegar (amount can vary, depends on the amount of potatoes)
1 c. sugar (equal parts vinegar/sugar)
1 tsp. oil
salt and pepper to taste
Cook potatoes with skins, then peel, slice and put into large mixing bowl. Add sliced onions. Set aside. In large frying pan, fry bacon. Set aside bacon, drain, leaving a little fat in the pan. In same frying pan, mix together vinegar, sugar, oil, salt and pepper. Bring to boil. Use your judgment on the amount of vinegar and sugar. It depends on the amount of potatoes you are using. Use equal amounts of each. Let liquid cool to room temperature. Pour over potatoes and onions. Top with fried bacon.
