    Eggplant Sandwich

    2 slices Kalamata Olive Bread
    2 1-1/2 oz. sl. eggplant 1/4" slices
    1 oz. sl. fontina cheese
    2 oz. roasted red peppers
    3 sl. marinated roma tomato slices
    1/2 oz. fresh basil
    1 Tbs. roasted red pepper cream
    2 oz. sweet potato chips
    2 fluid oz. soy-sesame marinade

    Roasted Red Pepper Cream
    1 cup sour cream
    1/2 cup roasted red peppers
    1/2 teaspoon Kosher salt
    1/2 teaspoon black pepper

    Soy-Sesame Marinad
    1 cup soy sauce
    1/4 cup toasted sesame oil
    1 tablespoon garlic


    Soy-Garlic Marinade
    Combine soy sauce, sesame oil and minced garlic, and hold for use.

    Roasted Red Pepper Cream
    Combine red peppers, sour cream, salt and pepper in a food processor and process until slightly lumpy.

    Eggplant Sandwich
    1. Place eggplant slices in shallow pan and pour soy-sesame marinade over top and marinate for 10-15 minutes.
    2. Drain marinade from eggplant slices.
    3. On a hot grill flash eggplant for 45 seconds.
    4. For pre-staging, layer eggplant slices with fontina cheese and set aside for later use.
    5. When ordered, lightly toast kalamata olive bread and place assembled eggplant set on grill for heating.
    6. Spread red pepper cream on both slices of toast. When cheese just begins to melt take from heat and put on toast slice.
    7. Top with roasted red pepper strips, marinated tomato slices and fresh basil. Top with other toast slice.
    8. Serve with sweet potato chips.
    9. Serve immediately.
