Sizzling Barbecue Sandwiches
List of Ingredients
1 medium onion, finely chopped
1 tablespoon olive oil
2 cups catsup
1 cup red wine vinegar
1/2 cup firmly packed dark brown sugar
1/4 cup liquid smoke
1/4 cup Worcestershire sauce
3 cloves garlic, minced
2 jalapeño peppers, minced
2 teaspoons salt
1 teaspoon coriander seeds, crushed
1 teaspoon cumin seeds, crushed
1 (4-pound) beef brisket
8 jumbo hamburger buns
Recipe
COOK onion in hot oil in a medium saucepan, stirring constantly, until tender. Stir in catsup and next 4 ingredients. Combine garlic, jalapeño pepper, salt, coriander seeds, and cumin seeds; stir well. Add to sauce mixture. Simmer, uncovered, over medium-low heat for 15 minutes.
TRIM excess fat from brisket. Place brisket on a sheet of heavy-duty aluminum foil in a roasting pan.
SPOON 1 cup sauce over brisket; seal foil around brisket. Bake at 325° for 3 to 3 1/2 hours or until meat is very tender. Let cool slightly, and shred meat. Add 2 cups sauce to shredded meat. Serve on jumbo buns with remaining sauce. Yield: 8 servings.
