Tropical Steak Sandwich
3 Tbs. mayonnaise
2 Tbs. yogurt (optional)
2 Tbs. freshly squeezed orange juice
1/2 tsp. ground coriander
1/2 tsp. curry powder
2 Tbs. olive oil
2 Tbs. rice wine vinegar
2 tsp. minced garlic cloves
2 tsp. fresh ginger root, minced
Two 5 to 6 oz. beef tenderloin steaks (fillets)
2 slices fresh pineapple (about 1/4-inch thick)
1 cup mesclun greens*
4 slices sourdough bread
Preparation:
Combine mayonnaise, yogurt (optional), orange juice, coriander and curry powder in a small bowl. Set aside.
In a separate bowl combine olive oil, vinegar, garlic and ginger. Add steaks and pineapple and marinate in refrigerator for one hour.
Fire up the grill. Place steaks and pineapple slices on grill and cook for about five to six minutes per side.
While the grill's working, spread the mayonnaise mixture evenly over two slices of bread and arrange lettuce over mayonnaise. Top with grilled pineapple and beef. Place additional lettuce on top, cover with remaining bread slice and cut in half. Arrange on plate with lettuce garnish.
Yield: 2 servings
*Note: Mesclun is basically a mix of young salad greens. The specific greens used in a mesclun mix vary, but common ingredients include arugula, dandelion, frisee , mizuma, oak leaf, mache, radicchio and sorrel.
