Florentine White Bean Soup
Makes 4 servings
List of Ingredients
10 cups chicken stock
2 cups navy beans, cooked
1 zucchini cut into thin half moons
1 onion sliced thin
1/2 tsp. each marjoram, basil and oregano
Salt and pepper to taste
1/2 lb. spinach, washed and chopped
1/2 lb. cooked spinach noodles fresh lemon juice to taste
Recipe
Combine stock with beans, zucchini, onion, spices, salt and pepper. Bring to a boil.
Reduce heat and simmer until vegetables are tender.
Add spinach and noodles. Turn off heat.
Let sit until spinach wilts. Season with lemon juice to taste.
Serve with Parmesan cheese.
