Recipe Introduction
My friend brought this over last week for our Canasta Party. She was the State Fair Grand Champion in Baking for years and you know if she bakes it - it has got to be out of this world. She made up the filling and it just makes the cake. This cake will WOW anyone! It sounds like a lot of trouble, but it's really pretty easy.
List of Ingredients
BLACK WALNUT CAKE
2 c. flour
1 t. baking soda
¼ t. salt
½ cup margarine
½ c. Crisco
2 c. sugar
5 eggs, separated
1 c. buttermilk
1 T. vanilla
1 ½ c. black walnuts, finely chopped
1 c. shredded coconut
½ t. cream of tartar
Preheat oven to 350 degrees. Grease and flour 3 – 9” cake pans.
In medium bowl, mix flour, baking soda & salt.
In large bowl, combine margarine, shortening and sugar; beat until smooth. Add egg yolks and beat 2 minutes. Add flour mixture alternately with buttermilk. Beat until smooth. Stir in vanilla, 1 ½ c. chopped black walnuts and 1 c. coconut.
Beat egg whites and cream of tartar until stiff, but moist; fold into batter. Divide evenly between prepared pans. Bake 25 - 30 minutes. Cool in pans for 10 minutes, remove and cool on rack.
FILLING:
1 c. sugar
4 T. flour
½ c. cream of coconut
½ c. milk
4 T. butter
1/8 t. salt
½ t. vanilla
1/3 c. black walnuts, finely chopped
Cook in heavy pan, sugar, flour, cream of coconut, milk, and butter until thick. Add salt, vanilla and walnuts. Cool; spread evenly over 2 bottom layers of cake.
FROSTING:
¼ c. butter
8 oz. cream cheese
1 t. vanilla
3 c. powdered sugar
In medium bowl, cream butter, cream cheese and vanilla until blended. Beat in powdered sugar until fluffy. Spread on top layer of cake and sides.
TOPPING:
½ c. shredded coconut
½ c. black walnuts, finely chopped
Sprinkle on top of frosted cake.
