    Banana Bundt Cake

    3 cups plain flour
    2 cups sugar
    1 tsp baking soda
    1 tsp cinnamon
    3 eggs, lightly beaten
    1 cup vegetable oil
    2 cups finely chopped ripe bananas (about 3 medium sized bananas)
    1 8 oz can crushed pineapple, undrained
    1/2 cup flaked coconut
    1 1/2 tsp vanilla
    1 cup chopped nuts

    In a large bowl, combine the flour, sugar, baking soda and cinnamon.
    Add the eggs, oil, bananas, pineapple and vanilla. Stir together until
    just mixed. Fold in coconut and nuts. Pour into a greased bundt pan
    and bake at 350º about 60 to 70 minutes or until it tests done. Cool
    for 10 minutes before removing cake from pan to a wire rack to cool
    completely.
