    TOH ALL-TIME FAVORITE CAKES & PIES 9/2004

    A summy lemon-flavored cake is just the dessert to brighten up a gray day (or any day). Lemon peel provides a nice zing in every bite. A light glaze gives the tall, golden cake a delicate crust.

    List of Ingredients




    GLAZED LEMON BUNDT CAKE

    1 cup (2 sticks) butter, softened
    2 cups granulated sugar
    4 large eggs
    1-1/2 tsps pure lemon extract
    1-1/2 tsps pure vanilla extract
    3 cups all purpose flour
    2 tsps baking powder
    1/2 tsp salt
    1 cup milk
    1 tblsp grated lemon peel

    GLAZE:
    1/4 cup lemon juice
    1 tblsp water
    1/2 tsp pure lemon extract
    3/4 cup granulated sugar

    Heat oven to 350ºF. Grease & flour 10" fluted (bundt) tube pan.

    In mixing bowl, cream butter & sugar; add eggs, 1 at a time, beating well after each addition. Beat in extracts.

    Combine flour, baking powder & salt; alternately add to creamed mixture with milk. Stir in lemon peel. Pour into prepared tube pan.

    Bake in 350ºF oven 60-70 mins until wooden toothpick inserted near center comes out clean. Cool 10 mins; invert onto wire rack; cool 10 mins longer. Place rack on waxed paper.

    Combine glaze ingredients; drizzle over warm cake. Cool completely before serving.
