    Portobello Mushroom Burger / Blue Cheese

    List of Ingredients





    - 4 large fresh Portobello mushrooms, wiped clean, gills scraped off and stems removed
    - 1 cup Italian salad dressing
    - 4 cloves garlic, chopped
    - 1/3 cup prepared mayonnaise
    - 1/3 cup canned, roasted red peppers, drained well and patted dry
    - 1 teaspoon salt
    - 1 teaspoon black pepper
    - 4 Bays English Muffins
    - 1/2 cup crumbled Gorgonzola cheese
    - 4 thick slices sweet onion
    - 4 Romaine lettuce leaves, washed and dried

    In a large sealable plastic bag, place mushrooms, Italian dressing and half the chopped garlic. Marinate for an hour, turning bag 3-4 times.
    In the meantime, place mayonnaise, roasted red peppers, remaining garlic, 1/2 teaspoon salt and 1/2 teaspoon pepper in a blender and blend until smooth. Cover and set aside until ready to use.

    Heat grill to medium/high heat according to manufacturer's instructions. Remove mushrooms from marinade and discard marinade. Season both sides of the mushrooms with remaining salt and pepper. Place on the grill bottom-side down. Cook for 5 minutes, then turn. Place the blue cheese, then the onion on the bottom-side of the mushrooms. Cook for another 5-7 minutes. Place Bays English Muffins cut-side down on the grill until lightly toasted.

    To prepare: Remove muffins and mushrooms from the grill. Place a leaf of lettuce on the bottom half of each muffin; evenly spread the mayonnaise mixture on the top half of each muffin. Place mushroom on the lettuce and cover with muffin top.
    Serve immediately.
