    This is a recipe passed to me from my mother, who got it when we

    were in the military, living in Germany. My favorite way to fix potatoes.

    List of Ingredients




    German Fried Potatoes

    2 tablespoon bacon fat, butter, margarine

    -- OR -- olive oil
    1 pounds bacon; cut into small pieces
    6 medium potatoes, sliced 1/4 -
    1 with skins on
    2 medium onions, sliced
    1/2 teaspoon pepper
    1/4 cup snipped parsley

    1/2 tsp garlic salt (optional)
    1/4 teaspoon salt

    3/4 cup water (optional)

    In a large skillet, melt fat and coat bottom and sides of skillet.

    I cut up my bacon in small pieces and start cooking first.
    Then, layer half the potatoes and onions; then sprinkle with half the salt,
    pepper and parsley. Repeat with remaining potatoes and spices.

    Add 3/4 cup water. Bring almost to a boil.

    Cover and reduce heat to low. Simmer for about 30 minutes or until

    potatoes are tender and water is mostly absorbed.

    If water is absorbed before potatoes are tender add a
    little more water.



    If you want the potatoes to brown more, use less water or no water

    at all and stir more often.
