    Golden Potato Bake

    List of Ingredients




    2 lb. medium potatoes, peeled
    2 cups diced carrots, cooked and drained
    2 tablespoons butter or margarine
    Salt and pepper to taste
    Milk


    Recipe



    Cook potatoes in boiling, salted water until tender. Drain. Add carrots. Whip at low speed with electric mixer, slowly beat in enough milk to make light and fluffy. Stir in margarine. Add salt and pepper to taste. Turn into a 2-quart casserole dish. Dot with additional butter. Bake at 350 degrees for 25 minutes.
    Serves 8.
