    List of Ingredients




    2 medium to small zucchini -It's best to use a smaller squash for stuffing.
    1 T olive oil
    ¼ C red onion, finely chopped
    ¼ C red pepper or yellow pepper
    ¼ C scooped zucchini
    ¼ C mushrooms, chopped
    1 T fresh garlic
    ¼ C dry white wine
    ¼ C heavy cream
    ¼ C Parmesan cheese
    1 C fresh bread crumbs



    Recipe



    Cut zucchini lengthwise and scoop.
    Prepare all chopped vegetables.
    In sauté pan with olive oil, heat and sauté onions, pepper, squash, mushroom, garlic and season with salt and pepper.
    Add white wine and heavy cream.
    Reduce over heat 2 or 3 minutes. Remove and stir in bread crumbs and cheese.
    Fill squash boats with filling.
    Bake in covered dish for 20 minutes at 350º topped with additional cheese.
    Serve as a side dish along with your favorite dish.
