Zucchini Pie

Here is a way to get you kids to eat veggies,
make a pie out of it!!!! I personnally make
several at a time and freeze them with zucchini
from the garden! It is amazing how much it
tastes like apple...
Use big zucchinis, but still tender enough that
you can pierce the skin easily with your thumbnail.
Peel, cut into quarters lengthwise, remove the
seeds and slice crosswise.
Toss together:
4 cups sliced zuchini, cooked until tender crisp.
About 5-6 cups of raw zucchini.
2 Tablespoons lemon juice
Dash salt
Mix in a bowl:
1 cup sugar
1 1/2 teaspoons of cinnamon
1 1/2 teaspoons of cream of tartar
Dash nutmeg
3 Tablespoons Flour
Add the zucchini and mix well. It will be runny, but
that's ok. Dump the filling into a 9 inch crust and
dot with butter. Add the top crust and bake at 400F
degrees for 40 minutes or until golden brown.
