    • 2 C. sifted all-purpose flour
    • 2-3/4 tsp. baking powder
    • 1/2 tsp. salt
    • 3/4 C. sugar
    • 1/2 C. shortening
    • 2 eggs
    • 2 to 3 med.-size bananas
    • 1/2 C. coarsely chopped nuts


    Instructions


    1. Heat oven to 350. Grease & flour 9x5x3" loaf pan. Sift flour, baking powder, & salt together. Beat sugar, shortening, & eggs 3 minutes at med. speed on mixer or vigorously by hand. Mash bananas. Add sifted dry ingredients alternately with bananas, beginning & ending with flour mixture. Blend well after each addition. Stir in nuts. Turn into loaf pan. Bake 60 to 70 minutes or until cake tester inserted in center comes out clean. Cool 15 minutes in pan. Remove from pan. Cool completely on wire rack. Wrap in aluminum foil or transparent plastic wrap; store overnight at room temp. before slicing to mellow flavor.
