Potato Croquettes
Source of Recipe
Ingredients:
2 cups mashed potatoes
1 small egg
Dash of pepper
Salt to taste
2 tablespoons chopped parsley
1 tablespoon parmesan cheese
Grated onion
Dash of garlic powder
Method:
Mix all the ingredients thoroughly.
Form the mixture into balls, approximately 1/3-cup size.
Roll each ball in fine bread crumbs, beaten egg and then crumbs again.
Set aside for 20 minutes, turning occasionally.
Deep fry at 375°F/190°C until golden brown and crisp.
