    Homemade Bolognese Sauce to serve an army or freeze because its better in a couple of weeks.


    List of Ingredients




    1 pound Lean ground beef
    1 pound Italian sausage, no casing
    1 pound Ground Veal
    1 Onion, chopped
    4 Gloves garlic, crushed
    2 Medium Carrot, 1/4 inch dice
    1 can (28 oz) diced, peeled tomato
    1 cans (6 oz) tomato paste
    1/2 tablespoon Fresh Thyme
    1/2 tablspoon Fresh Basil
    1/2 teaspoon Fresh Oregano
    3 Bay Leaves
    1 cup Dry white or red wine

    Heat a large dutch oven and add olice oil, brown onions and carrots until onions are transucent, then add garlic, stire to incorporate then add meat. Continue until meat is browned, then drain extra fat return to the heat and add the wine, simmer for 2 minutes then add tomatoes and tomato paste, follow with the remianing ingredients and simmer for6-8 hours uncovered adding just enough water to keep moist . Add Make about 12 cups. Spoon over your favorite pasta.


    Serve with Homemade Pasta and Fresh Parmesan cheese

    Fresh Pasta
    2 cups of all purpose flour
    2 Eggs
    1 Cup Water
    1 Teaspoon of salt
    Make a well on the flour and slowly incoprporate other ingredients. Nead on a floured board for 5 minuts then refrigerate for 30 minutes. After dough rests rollout into thin sheets using a pasta sheeter or a rolling pin. slice into 1/2 strips. I a large pot boil at least 1 gallon of water with a 1/2 teaspoon of salt and 1/4 cup of olive oil. Cook pasta for a short 4 minutes and taste to check doneness, pasta should just be resistant to your bit (al dente) drain and add to saute pan with hot meat sauce, add 1/2 stick of diced butter and toss gently until well combined. Grate cheese on top and enjoy.

    This is awesome and well worth the trouble, serve with a grean salad and some fresh fruit for dessert.
