This is from my wife's best friend Jane, she is half english and half Sri Lankan
List of Ingredients
1lb fresh limes
equal amount of scots bonnet chillies
lots of rock salt or sea salt
a big airtight pickling jar
Recipe
cut in half and de-seed the chilliies, partially cut the limes so you can stuff each lime with half a chilli, stuff the limes in the jar a layer at a time covering with a good amount of salt as you go, when you get to the top screw on the lid, place the jar somewhere in direct sunlight but not so it gets hot, leave for at least 6 months or longer.
Open chop up and enjoy, sweet and sour and BLOODY HOT AND SPICY!!!! you have been warned, wakes up a salad no end.
