2 Tubs (4 1/2 lbs ea.) Hand-Cleaned Chitterlings
2 medium-sized yellow onion
1 medium green pepper
1 Tbl Salt
2 Tbl Ground Black Pepper
2 Tbl Ground Red Pepper
1 tsp Thyme
2 Bay Leaves
2 8 oz.cans tomato sauce
1 6 oz. can tomato paste
Recipe
Place hand cleaned chitterlings in large pot and cover with water. Bring to a boil. Cover, allow to boil 1 to 1 1/2 hours. Be careful not to overcook. Drain water after boiling. Add less water, bring to a second boil.
Reduce heat. Add chopped onions, salt, black pepper, red pepper, tomato sauce, tomato paste. Stir and simmer.
Add Thyme, Bay Leaves, green pepper. Simmer 2 to 3 hours or until tender.
Add additional seasoning or hot sauce to taste.
10 to 12 hearty servings.
