Recipe Introduction
My Mom made the best pecan pie. It was a special treat at holidays or Sunday dinner...fried chicken, rice and gravy, butter beans, biscuits, sliced tomatoes and other fresh veggies(in season). Unfortunately, I don't have her recipe. This one is pretty good.
List of Ingredients
1 C. sugar
1/4 C. dark corn syrup
1/2 C. light corn syrup
1/2 C. margarine
3 eggs beaten
1 3/4 C. pecans, chopped
1 t. vanilla extract
1/4 t. salt
Recipe
-Blend sugar, syrup and margarine in a saucepan. Cook over medium heat, stirring constantly, until mixture comes to a boil. -Blend hot mixture slowly into beaten eggs.
-Stir in pecans, vanilla extract and salt.
-Pour into pie shell.
-Bake 375 degrees about 30 minutes.
