    In Maine where I was raised , my mother always made her "Dressing" as we called it, from potatoes.
    This is also great to stuff fish with. (Large fish, such as Haddock or Pollock) Can you tell I'm from Maine? :)

    List of Ingredients




    Potatoes
    Onion
    Day-old bread
    Salt
    Pepper
    Poultry seasoning

    Recipe



    Boil potatoes as you would for mashed potatoes (enough to truss the turkey)
    Drain when cooked and put back into the pot. Mash (no butter or margarine)
    Add some chopped onion, some day old bread soaked in milk (enough to give the potatoes some moisture) , salt, pepper and poultry seasoning to taste.
    You can either truss the bird with it or bake in an ovenproof dish as a side dish.
