Cheddar Thyme Biscuits

2 c. plus 2 T. all purpose flour
2-1/2 t. sugar
2-1/2 t. baking powder
3/4 t. baking soda
1-1/2 t. salt
6 T. cold, unsalted butter cut into large dices.
8 oz. extra sharp cheddar cheese grated
1-1/2 T. chopped fresh thyme leaves or
2 t. dried thyme
1 c. buttermilk
For biscuits: Heat oven to 450 deg.
In a large mixing bowl, whisk together flour, sugar,
baking powder, baking soda and salt.
Cut in butter with your fingers or a pastry blender until it is the texture of coarse meal.
Stir in cheese and thyme.
Pour in buttermilk and stir just until combined.
Drop dough in 12 portions onto a nonstick baking sheet.
Bake until golden 14-16 minutes.
