    Raspberry Refrigerator Cake

    18 lady fingers
    2 cups crushed raspberries
    2 tablespoons lemon juice
    1 cup sugar
    2 tablespoons cold water
    1 tablespoon unflavored gelatin
    1 pint whipping cream

    Cover the sides and bottom of a fancy mold or bowl, with split lady fingers. Soak gelatin in cold water and then dissolve over hot water. Add dissolved gelatin, lemon juice and sugar to crushed berries. Chill. Fold in the whipped cream and put in the refrigerator overnight. Serve with whipped cream, if desired.

    Serves 8
