Spicy Apple Jam
Medium cooking apples ( 8 or 9)
2 cups water
4 tablespoons lemon juice
7.5 cups sugar
1.5 tablespoons ground cinnamon
1 teaspoon ground allspice
Half of a 16-oz. bottle liquid fruit pectin
Peel and core apples, cutting into eighths. Process 2 apples, 1/2 cup water and 1 tablespoon lemon juice at high speed of blender until all the fruit has passed through the blades. Repeat with remaining apples, water and lemon juice to make 5-1/4 cups fruit.
Place fruit in a very large saucepan. Add sugar, cinnamon and allspice. Bring to full boil and boil 1 minute, stirring constantly. Remove from heat and immediately stir in pectin. Skim off foam and ladle jam into glasses. Seal with paraffin.
Yields: 10 (1-cup) glasses
